Pico de Gallo

Equipment

  • Lime juicer. You can use a spoon if you don’t have a juicer. The curve of the spoon helps follow the curve of the peel to smash every bit of fruit and release the juice.

Ingredients

  • 2 Roma tomatoes, chopped
  • 2 jalapenos, seeded and chopped
  • 3 Tbsp chopped fresh cilantro
  • 1/2 of one red onion, chopped
  • Juice of 1/2 of one lime

Prep

  1. Chop the tomatoes
  2. Chop the jalapenos
  3. Chop the cilantro
  4. Chop the red onion
  5. Slice the lime in half.

Instructions

  1. Combine
  2. Mix thoroughly
  3. Refrigerate for 4-24 hours before serving

Notes

  1. If you’re using a juicer with a hinge and a round part that holds the lime, the cut part of the lime should face DOWN, toward the holes.
  2. Swim goggles have always been 100% effective for me at blocking onion crying.
